At A Glance

Lucie Thiéblemont came to winemaking by an unconventional route. Originally trained as a chef, she was working at a three-Michelin-star restaurant in Burgundy when she met Charly Nicolle, whose family had grown vines in the Chablis village of Fleys for over a century. She began her journey working alongside Charly at his family’s estate before founding a domaine under her own name in 2015, anchored by old-vine Pinot Noir in Tonnerre and built around a simple philosophy: organic-minded farming, minimal intervention, and extended lees aging in stainless-steel barrels to maintain the purity and freshness of the wines. The range now spans a Crémant de Bourgogne Blanc de Noirs, a village Chablis, and the Premier Cru Les Fourneaux. The wines are defined by fine minerality, salinity, and a richness that carries through to the finish.
