It all began in 1870 when a young butcher named Balthasar Ress opened a Guesthouse in Hattenheim, planting the seeds of what would become a multigenerational hospitality and winemaking legacy in the Rheingau. The estate, now a prestigious VDP member, has since grown into the largest EU organic wine estate in the Rheingau, having fully converted to EU organic viticulture in 2016. Today, Balthasar Ress produces highly regarded estate-grown wines and has created two phenomenal négociant projects: one under the Ress family name, with grapes from top growers, and a fun entry-level tier, simply called White and Red Rabbit, sourced from the Rheinhessen.
