Fine and persistent bubbles sparkle in a flute of this amber-colored Spumante. Light-bodied and high in acidity, gentle floral notes combine with a hint of grassiness. Ridiculously fresh and invigorating on the palate with a lingering finish rich with acidity and pleasant mineral notes.
Excellent as aperitif, goes well with a range of dishes, from chilled gazpacho to chilled shrimp to roasted pork or chicken.
The Ribolla Gialla grape arrived in Friuli in the 13th century – a native of Greece that historians say travelled to the region via Slovenia. Its wines are characteristically light and crisp, with hints of apples, citrus and almonds. It is often called just Ribolla.The 19th Century phylloxera epidemic took a hard toll on Ribolla plantings and many Friuli vineyards owners replanted with French wine grapes like Merlot and Sauvignon Blanc. By the 1990s less than 1 percent of all white Friuli wines created under the DOC contained Ribolla. By the turn of the 21st century, international interest in the wines of the Friuli-Venezia Giulia had led to an increase in plantings of the grape.

Temperature controlled fermentation; secondary fermentation is long Charmat method. Wine rests on the lees 90 days.
