Summary: Brother and sister team, Mauro and Alessandra Mauri, express their shared winemaking philosophy through a strictly limited range of low-production wines and a handful of key wine-making concepts. They strategically focus on native Fruili grapes and the terroir of Friuli, something they have come to know and love. The high standards at Borgo San Daniele are based on irrevocable rules of practice which begin in the vineyard with high density planting, low plant vigor, and sustainable farming practices. This results in well balanced, thoroughly integrated wines that truly display Mauro and Alessandra's passion for their vineyards and wines that they produce.

Vinification: Grape crush is followed by maceration on the skins at natural temperatures for 8 hours. Then soft pressing occurs, followed by temperature controlled fermentation. Sur Lies (with the dormant yeast and residual sugars) barrel aging for 25% of the wine in 2000 liter Slavonian oak until late spring. Assemblage and unfiltered bottling at the end of summer.

Aromas & Flavors: A classic Friuli Pinot Grigio, and yet much more! Hand sorted grapes and select vinification methods have created a premium, low production Pinot Grigio that shows depth and elegance. It begins with ripe pears on the nose, transforming into aromatics of dry hay and roasted almond notes as it opens up. Full and soft on the palate, yet balanced and fruity, with an elegant and aromatic finish. Pairs well with most chicken dishes and mild to medium- strong cheeses

Varietal Notes:

Pinot Gris is a white wine grape variety of the species Vitis Vinifera. The word "Pinot", which means "pinecone" in French, could have been given to it because the grapes grow in small pinecone-shaped clusters. The wines produced from this grape also vary in color from a deep golden-yellow to copper and even a light shade of pink. Firm acidity gives Pinot Grigio a mouth watering appeal, generally offering nice mid-palate balance with a short, clean finish. The clone of Pinot Gris grown in Italy is known as Pinot Grigio
